Doughnuts are (in my opinion) one of the best desserts in the world. The best ones are the ones we make ourself. Only very skilful housewives have the knowledge to make them delicious and nice looking at the same time. Well, I’ve never been one of them. European doughnuts are hard to make.
Anyone that’s ever tried them, will agree.
My dough was either too stiff or too soft. If by any chance, I succeeded and made the dough just fine, the oil was too hot, and they were all burned up. I gave up, we only ate the bought ones, the American ones.
But… Once my close friend gave me this awesome recipe and I decided to give it one last try. And guess what! I did it!! It worked, these doughnuts were soft, perfectly baked, nice looking and delicious. And they have been like that ever since.
This is the recipe, I am sharing it with you:
1 kilogram of flour
9 dag of yeast
½ l milk
7 egg yolks
6 dag sugar
1 vanilla sugar
1 dl oil
½ dl rum
1 teaspoon salt
½ lemon juice
Tutorial:
Mix egg yolks, sugar and vanilla sugar until you get the mixture that looks and rise like a foam. Add the oil and rum. Slowly stir, while adding the salt, lemon juice, milk and flour. Continue to stir for about 15 minutes. When fully mixed, take the tablespoon and form balls (about 7-10 g weight of a ball) and let them rise for about 30 minutes (every side 15 minutes). Pour the oil in the electric baking pan (you can use regular pan too), the exact amount depends on the size of the pan. Slowly warm the oil, set it to medium heat. Bake on each side for about 4 minutes. When done, fill them with homemade jam and sprinkle them with powdered sugar.
